Chicken & Potato Chip Casserole

An Easy and Incredible Comfort Food!

This chicken casserole is incredibly easy and will have the kids begging for more! Chicken, rice, and broccoli covered in melted cheese and topped with crispy potato chips! The ultimate in casserole comfort foods that I’m certain will become one of your favorites!

About This Recipe  

Let’s face it, life gets crazy busy and sometimes you just want something filling and easy for supper.  This is it, and boy is it delicious!  We all love a good comfort food and an easy to make comfort food makes it even better!  

Now when I say easy I mean EASY!  Simply prepare the rice and chop up broccoli, onion, and chicken and throw all of the ingredients except the shredded cheese and potato chips in a bowl and mix together.  Then transfer it to a lightly greased (I use spray) baking dish.  Top with the shredded cheese and potato chips and into the oven it goes.  25 minutes later and you’re ready to eat!

The way I have the recipe written does take a little more time because I cook and chop the chicken, chop the onions, make the broccoli into tiny pieces and shred the cheese.  However, you can make this really simple by using canned chicken (drained), slightly cut the broccoli florets that are already packaged, and use pre-shredded cheese.  Then all you have to do is chop an onion and crush some potato chips.

When it comes to the potato chips to use on top of the casserole, you can use whatever kind or flavor you’d like.  I use Lays plain or wavy chips.
