This tortellini soup recipe has sweet Italian sausage, cheese tortellini, and leafy green spinach in a rich tomato broth. This is definitely not your ordinary, everyday tomato soup! This is a true crowd pleaser!

About This Recipe  

This is a definitely a hearty and tasty Italian sausage and tortellini soup that is just what cool (or cold) weather calls for! This soup starts out with Italian style sausage, which itself is already packed with flavor. The chicken broth and diced tomatoes fill out the body of the soup and the cheese tortellini brings everything together. The addition of a little fresh baby spinach leaves wilt into the soup nicely. Then top the soup off by adding a little parmesan cheese on top of this soup to melt and really add a nice finishing touch of flavor! This tortellini soup with Italian sausage and spinach is just so easy to make and perfect for anytime you want a twist on tomato soup!

ITALIAN SAUSAGE AND SPINACH TORTELLINI SOUP

This tortellini soup recipe has sweet Italian sausage, cheese tortellini, and leafy green spinach in a rich tomato broth. This is definitely not your ordinary, everyday tomato soup! This is a true crowd pleaser!

Ingredients

• 1 Tbsp. olive oil
• 1 lb. ground Italian sausage
• 1/2 cup chopped onion
• 1 Tbsp. minced garlic
• 1/2 tsp. italian seasoning
• salt and pepper to taste
• 1 quart (32 oz.) chicken broth
• 1/4 cup fresh basil, chopped or 4 tsp. dry basil
• 1 (28 oz.) can crushed tomatoes
• 1 (14.5 oz.) can diced tomatoes
• 18 oz. pkg. frozen cheese tortellini
• 2 cups packed fresh spinach, finely chopped
• 1/4 cup grated parmesan cheese for garnish, if desired

Instructions

1. In a medium pan, saute the Italian sausage with the onions and garlic in olive oil over medium heat until until the sausage is no longer pink; about 4-5 minutes. Drain any excess grease. Season with italian seasoning, salt and pepper.
2. Add the sausage mixture to a crock pot. Add chicken broth, basil, crushed and diced tomatoes; mix well.
3. Cook on low for 3-4 hours.
4. Cook the tortilini according to package directions. Add tortillini to soup in crock pot. Add the chopped spinach and cook for another 5-10 minutes.
5. Garnish with grated Parmesan cheese, if desired.

Notes

Before Getting Stated:

• Garlic: mince 4 cloves garlic (or use 2 tsp. garlic from a jar)
• Onion: chop onion
• Basil: chop fresh basil (unless using dry)
• Parmesan Cheese: grate or use pre-grated
