You may be asking yourself if this is really a quick bread or rather a cake, or is it indeed brownies . . ? And the hidden gem in this quick bread is the abundant zucchini. Nobody would even know you snuck vegetables into this glorious slice of heavenly dessert - unless you told them, that is! Oh and did I mention it’s made with light brown sugar in place of white sugar? That’s right, even MORE flavor awaits you with this chocolate zucchini bread!

About This Recipe  

Simply Divine Zucchini Bread is a really easy and phenominally delicious quick bread! This recipe makes 1 large loaf of bread packed full of zucchini, making it extra moist with lots of flavor. It's so easy to make and so satisfying to eat.

Let’s Talk A Little About Some of the Ingredients:

  • Zucchini - Grate the zucchini, but there’s no need to peel it unless you absolutely want to. I prefer to leave the skin on when I make any kind of zucchini bread.

  • Special Dark Hershey's Cocoa Powder AND semi-sweet chocolate chips. Double the chocolate, double the fun! PLUS, there are chocolate chips on top!

  • The combination of eggs, melted butter, olive oil, light brown sugar, and zucchini come together to create the most incredibly moist bread.

  • Vanilla Extract - a high quality extract delivers a heightened taste to whatever you use it in. Basically, quality ingredients produce quality baked goods. That is why I have switched from using regular vanilla extract to Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract for Baking and Cooking. You can find it HERE.

What kind of bread pan to use: I use (1) 8 1/2”x4 1/2” disposable aluminum foil pan for this recipe. It is slightly larger than the “normal” aluminum foil pans making it the perfect size for this recipe.

Is your zucchini bread falling apart when you slice it? If so, it most likely was too warm when you sliced it. The high moisture content in this recipe can cause the hot bread to crumble when sliced. Let cool for at least 30 minutes before cutting into it.

Want to mix it up a little? Use peanut butter chips in it instead of chocolate chips - or in addition to chocolate chips! Oh that sounds so delicious!

*Zucchini can be grated with or without peeling. I prefer NOT to peel it, but that is just my preference.


**If using a different size loaf pan, just adjust the baking time up or down, depending on the size of the pan.


The bread will keep on the counter, in a tightly sealed container, for up to 4 days. After that it should be refrigerated to keep fresh.


This bread also freezes really well. Simply slice the bread when cooled and lay on a baking sheet in the freezer until frozen, then transfer slices to freezer bags and grab a piece to thaw out anytime you like!
